Start with any boxed version of carrot cake and add 2/3c of crushed pineapple and 1/2c shredded carrot instead of veggie oil, one egg, and a cup of water. 2. Butter and flour 2 rectangular brownie pans and split batter evenly.Bake at 350 for 15-20 mins, place in the middle rack so they both cook evenly. 3. Once cool, stack cakes on cake board and crumb coat with cream cheese frosting 4. Make the woodgrain effect to fondant by adding brown gel color and folding over and pulling out until most of the white goes away but it isnʼt totally blended in. 5. Roll out and drape over cake, smoothing and pressing down the sides. 6. Brush with water to remove excess powdered sugar and to give it a clean glossy look. 7. Make sushi rolls out of jumbo marshmallows, fruit leather (nori), white sprinkles(rice) and assorted candy. Arrange thoughtfully on top of cake using icing to adhere each piece. Ashley's Tip: Get creative! I used rice crispy treats to make nigiri, pink colored fondant for shrimp, yellow fondant for egg, orange Nerds for tobiko, green jelly beans for avocado, watermelon licorice for crab meat etc. Your only limits here are your imagination! ****
